
tween 60 is a lemon to orange oily liquid or semi-gel, with a slight special odor and a slightly bitter taste. soluble in water, aniline, ethyl acetate and toluene, insoluble in mineral oil and vegetable oil.
production method:
a mixture formed by the partial esterification of sorbitol, sorbitan anhydride and stearic acid. it is formed by condensing alcohol and its mono- and di-anhydrides with 20 mol ethylene oxide.
uses:
emulsifiers, stabilizers (especially frozen desserts to avoid oil and water separation), dispersants (such as the dispersion of non-dairy coffee mate ), keep bread and dough hydrated, and add foaming agents to alcoholic beverages to non-alcoholic beverages.
